In 2019 Knockanore Farmhouse Cheese supported by LEO Waterford, participated in a LEAN programme to streamline and improve operations. As a result of this LEAN programme, it became apparent that Knockanore Cheese needed to diversify in order to grow the business. A 2-pronged approach was taken:
- To blend pasteurised cheese with a local and Irish flavour profile
- To create a crumble cheese with a shorter maturing period.
Knockanore Farmhouse Cheese applied for an Agile Innovation grant from Waterford Local Enterprise Office and application was approved to conduct research and development into the viability of the above products.
15 blended cheddars were trialed
Of these 15 cheddars, 9 have been put forward for production, 4 in the Dunne’s Blackwater range and 5 in the Bride Valley Range of pasteurised Irish cheddar.
Knockanore produced its own Crumble style cheese on the facility and trialed 15 blended varieties.
*Although these cheeses have been brought to final trials, they have not yet been produced to a commercial scale as Knockanore needs to upgrade the pasteuriser to meet current regulations (which has been delayed due to Covid 19). Further work has to be done on pack size, naming, branding, quality control and shelf-life testing. The crumble cheeses have not been launched as the delay in upgrading facilities in Knockanore as a result of Covid. We felt we were better placed to concentrate on the blended cheddar products as we had the facility to see this project through to a conclusion.
